Nothing says Back to School to me like a good loaf of Zucchini Bread! I grew up loving this stuff and a favorite memory from when I was in public school was my mom packing 2 slices of it in my lunch box–one for me and one for my friend Delana who loved it as much as I did (I will still occasionally make her a loaf if I’m in Wyoming around Christmastime!) It’s super delicious and just tastes like a soft, cinnamony desert–you can’t even taste the zucchini! This recipe is originally from a recipe by Faith Baptist Church in the Red Cliff Camp Cookbook, but my mom has adapted and tweaked it quite a bit over the years so now it’s pretty much her own 🙂
Of course you can’t just have Zucchini Bread by itself–but slathering it with high calorie delights is kind of defeating the whole purpose of sticking the veggies in it, right? I also hate how convenience spreads are normally chock full of huge ingredient lists that claim ease and being being better for you but clearly aren’t! That’s why when I heard about Smart Balance I was intrigued! Sure enough ingredient list was MUCH shorter, not to mention it had ingredients I could pronounce and wanted to eat!
Mmmm…..yeah! The choice was pretty easy for me! Not to mention that Smart Balance is also available in a 15 oz package in a space saving square container–pretty awesome. We have a very small fridge and it fills up FAST with all my cooking and baking! I’m all about space saving containers! Especially this one, its eco-friendly square tub reduces greenhouse gas emissions by 18%! That equals 6,487 newly planted trees each year — awesome right??!!
So now that you know what you’ll put on it I’m sure you’re wanting the recipe–right?!
Cinnamon Zucchini Bread Recipe
3/4 Cup Oil
2 Cups Sugar
2 Cups Grated Zucchini
3 tsp Vanilla
3 1/2 Cups Flour
1 tsp Baking Soda
1 tsp Baking Powder
3 tsp Cinnamon
1/4 tsp Salt
Grate the Zucchini.
Cream all the ingredients together, mixing well after each addition. Remember to add the flour in just a little at a time. If you wish reserve 1 tsp cinnamon to sprinkle on the top of the loaves (or mix it in with the rest).
Grease 2 loaf pans and pour equal amounts in each. Bake at 350 for 1 hour or until done.
Let cool completely and then top with Smart Balance. Enjoy!
