For about a year now our family has carried on the very fun but easy weekly tradition of having a “fancy” brunch on Saturday mornings. Hubby and the kids all love breakfast foods, but in the rush of the week a bowl of cereal or a cup of yogurt is our usual fare. I enjoy breakfast foods later in the day, and so the idea of having a nice, cooked, sit down brunch once a week was born! It’s been a lot of fun, and although we do miss weeks here and there it’s awesome to have a simple, fun way to have almost a mini-celebration for each weekend!

While I’ve enjoyed trying out new recipes from my Breakfast Pinterest Board on some weeks, on others we revert back to the breakfast classics like pancakes, omelets, and (my favorites) French Toast and Smoothies! I love them so much that I decided I needed to share the recipes for them with you!

Perfectly Easy French Toast & Sunny Citrus Smoothie Recipes

 

Have you ever had a smoothie? I mean a REAL smoothie?! There was an amazing local smoothie place (in Wyoming, of all places!!) when I was a teenager and going there for dates with Bob has spoiled me ever since. Perfectly balanced flavors were mixed into a thick and delicious smoothie, which has spoiled me for life on soupy, frothy variety that you get nearly everywhere else.

 

While I was shopping at Sam’s Club with the kids awhile back I noticed an end cap display of SunnyD in the refrigerated section, which instantly made me start thinking nostalgically of Wyoming and drinking it as a kid at the end of Soccer games. This nostalgia also made me remember my favorite ever smoothies, and realized that it had been way too long since I’d made one! Since it was just $5.38 for a 24 count I added some to our cart and knew right away what part of our next weekly brunch would be.

 

When I first moved away I was shocked and so sad that we no longer lived by an amazing smoothie place. Determined that I still needed my smoothies, I finally managed to get a copy of an ingredients list and with a little tweaking I soon had come up with my own recipes for amazing “real” smoothies!

Ingredients

  • 1 1/2 Containers of SunnyD
  • 8 oz Frozen Pineapple, Sliced Strawberries, Peaches, and Mango
  • 3 Scoops Lime, Orange, & Lemon Sherbet

 

Blend all in blender and add SunnyD until you reach the consistency you desire, as I said I love mine super thick and creamy! I’d highly recommend spending a little bit of money for a blender that will do the job well since once you try this you’ll be hooked and want to make them frequently! These are honestly so filling that you could use them as a breakfast just by themselves, or you can use this recipe and split it among a few people so everyone gets a taste but not completely full on it alone!

 

This pairs wonderfully with my super easy but super delicious recipe for French Toast!

 

Ingredients

  • 5 Slices Thick White Bread (“Texas Toast” style)
  • 1/4 cup Cinnamon Flavored Coffee Creamer (you can also make your own cinnamon flavor cream for this, but I just  find it’s so much easier to use the pre-made kind–especially now that I can buy an all natural one!)
  • 1 Tablespoon Vanilla (my Mom-in-Law is in love with this kind imported from Mexico, but you can also use a different kind, just make sure it’s the real vanilla extract, not the artificial stuff, it tastes so much better!)
  • 1 Egg

 

Scrambled the egg on a plate with raised sides and stir in creamer & vanilla.

Coat the bread on both sides and place onto flat iron grill until browned.

 

Serve with butter, syrup, and a sprinkling of powdered sugar!

 

Delicious, brunching perfection that the entire family will love!!
