My family loves cereal. Seriously, they LOVE cereal! When I buy a family sized box of cereal, I am lucky if it feeds us breakfast for two days. If I don’t watch them, my husband and children will eat cereal for breakfast, dinner and a late night snack! Part of the reason cereal is so popular at my house, especially in the mornings, is that it’s quick. My kids are HUNGRY when they wake up and do not want to wait for me to make a hot meal.

The last box of cereal I bought was gone in record time! I decided to find some recipes that I could make ahead and freeze for quick morning meals when we’re out of cereal or just want something hot. The donut shop drive thru is much more tempting when we do not have something quick to make at home!

I was inspired by a recipe on Once a Month Meals to make Mini Freezer Cinnamon Rolls. My family loves these tiny cinnamon rolls! It is simple to prepare a large batch to freeze. On busy mornings I can warm these up in less than two minutes.

Gather up your ingredients and supplies. The cooking equipment you will need includes a 24-count mini muffin tin, pastry brush, medium bowl, whisk, wax paper, sharp knife, tablespoon, and teaspoon. For the cinnamon rolls, you will need refrigerated crescent rolls, brown sugar, cinnamon and butter. The icing is made with powdered sugar, butter, milk, and vanilla.

On the wax paper, roll out the crescents. Pinch the rolls together at the perforations until it is a sheet of dough.

Brush the dough with melted butter. Sprinkle the cinnamon and sugar onto the dough.

Roll the dough into a log. Be careful to close any gaps that may open up in the dough as you roll it up.

Cut the log into twelve cinnamon rolls. Place the cinnamon rolls into the greased mini muffin tin. Repeat the steps with the second container of crescent rolls.

Cook the cinnamon rolls at 425 for 10-12 minutes. They will be finished when they are slightly browned on the top and edges. Prepare the icing according to the recipe directions and drizzle onto the cinnamon rolls.

Place the cooled cinnamon rolls on a cookie rack or sheet and put them in the freezer. Once they have hardened, usually within a couple hours, take them out and place them in a gallon freezer bag. When you are ready to serve the cinnamon rolls, remove the desired amount out of the freezer bag and heat them in the microwave until warm.

When I prepare a batch of Mini Freezer Cinnamon Rolls, I also cook and freeze a batch of turkey sausage. In the mornings I heat up the cinnamon rolls and turkey sausage and add in some fresh fruit for a complete meal that my kids love.

Icing

¾ Cup powdered sugar

1 Teaspoon vanilla

2 Teaspoons butter, melted

2 Teaspoons milk

  • Combine all ingredients in a bowl and whisk until smooth.
  • If necessary, whisk in more powdered sugar one tablespoon at a time until desired texture is achieved.
  • Drizzle icing on top of cinnamon rolls.
  • Flash freeze the cinnamon rolls and then transfer to a gallon freezer bag. Store in the freezer.
  • To serve, reheat in the microwave until warm.

2 Containers crescent rolls

2 Tablespoons of butter, melted

4 Tablespoons of brown sugar

4 Teaspoons of cinnamon

  • Roll out one container of crescent roll dough onto wax paper.
  • Press the dough together so it makes a sheet of dough.
  • Brush half of the melted butter onto the dough.
  • Sprinkle two tablespoon of brown sugar on the dough.
  • Sprinkle two teaspoons of cinnamon on the dough.
  • Roll the dough into a log.
  • Once rolled, cut the log into twelve even pieces.
  • Place each cinnamon roll into greased mini muffin tin.
  • Roll out second container of crescent roll dough and repeat.
  • Cook cinnamon rolls at 425 for 10-12 minutes.
  • Drizzle icing on top of cinnamon rolls.
  • Flash freeze the cinnamon rolls and then transfer to a gallon freezer bag. Store in the freezer.
  • To serve, reheat in the microwave until warm.
