So, I have to brag a little–I know the secret of How To Get Your Toddler to Eat Spinach. In fact, both Amber and Tyler eat spinach on a regular basis! And since this is pretty cool, not to mention me loving this recipe I knew I’d have to pass it along!
I threw this Strawberry Fields Salad together one because I needed one to bring along to a playdate and was trying to be healthy. One thing that’s great about it is that it only has a few ingredients but you can also mix and match easily to make it delicious for you! I call it this because between the sweet strawberries, tender greens, earthy crunch of the nuts, and sweet tang of sunshine in the dressing it really just makes me think of being outside in a field of strawberries!
Baby Spinach (I buy it in a bag, it’s just easier that way and I find it hard to find baby spinach otherwise)
Almonds (whole or slivered/chopped–your preference! You could also swap with pecans or walnuts)
Fresh Strawberries (it’s nice because this recipe is forgiving so you can use ones that don’t look great)
Chop Strawberries up and mix baby spinach, strawberries, and almonds together. Drizzle (lightly–a little goes a long way!) with vinegrette–serve to toddlers and be amazed as they gobble it up!
