You all know by now how much I love my “cheat night” meals! My family depends on me to get dinner on the table each night, but especially with our new very crazy schedule it’s such a relief to have some great Effortless Meal Ideas to be able to fall back on at least once a week!
I mentioned just a little while ago what an important and busy Back to School Year this is for us with 3 students ranging from the first year at school to a Senior in college studying engineering. Now we’re several weeks into our school routine and so far things are crazy but going well! Amber’s still adjusting to things being tougher and more academic in second grade. This is the first year she’s actually having to work at her school work and not just breeze through everything. This is also the first year with more homework each night, so we’re both adjusting to that!
A few little tips from me and hubby got her pointed in the right direction once more, however. We’re also figuring how to squeeze in homework throughout the evening, and all of that is helping us find a groove once again. A folder full of perfect grades for her this week made us all smile, even more than usual since she actually worked hard for them this time!
Tyler is thriving in school so much more than I had hoped for and it’s such a relief and praise to know that we made the right call in having him start Pre-K instead of Kindergarten this year!
Both kids have also started soccer full swing and that’s also quite the adjustment with practices two days a week and two games each Saturday! The under 6 group that Tyler’s with is just hilarious to watch, however, and Amber is loving playing much more than she enjoyed ballet last year, so we’re all really enjoying the season so far!
Add to all that I’m still working 20-35 hours a week from home and volunteering once a week at Building Blocks–whew! It’s a small wonder that when I head to Walmart I’m always keeping my eyes open for some great (easy) meal inspiration!
This week when I was there I noticed these great ideas at the deli for a Marketside Pizza meal combo which is also a favorite cheat night meal and it’s perfect grilled or baked. Later on I spotted another idea near the checkout lines, which I ended up taking home. Rotisserie Chicken, Coke, and Potato Salad have always been a favorite weekend meal for us! I love how it’s prepared and fully cooked already and all I have to do is take it home. These effortless meals provide me with all the convenience plus loads more flavor and nutrients than one of those drive through places. Extra bonus? These meal options allow us to have the sit down meal together that’s so important to our family without the time and fuss of cooking one myself!
When we first moved in with my in-laws my mom-in-law showed me how to kick this effortless meal up a notch and introduced us to Effortless Hawaiian Chicken Sliders. These easy little sandwiches are perfect for little hands to hold, and just the thing to hit the spot on a busy night after homework and before soccer! They take just minutes to put together, too, which really does make them effortless! I also love that with the chicken and larger side I have leftovers for lunches for us all to use the next day. It’s the meal that just keeps on giving! Here’s how to make it!
Effortless Hawaiian Chicken Sliders
- Marketside Rotisserie Chicken
- Cheese Slices (I love to use these little, thick ones that are just the perfect size for this! Cheddar and Monterrey Jack are our favorites but choose yours!)
- Hawaiian Sweet Rolls (You can find all these ingredients at the deli, too!)
- 2 Liter Coca-Cola (a little caffeine boost is appreciated on harem-sacrum nights)
- 2 lb. Side (I always get Potato Salad, but you can’t go wrong with Coleslaw or Macaroni Salad, either!)
First take your Hawaiian Rolls and split them down the middle. Next slice off some of the Rotisserie Chicken, I love using the breast meat for these. (Psst, yes it smells heavenly, go ahead and sneak a bite while you do this, I won’t tell, promise).
Layer your chicken onto the rolls and top with cheese, and then close together.
Fill up a glass of refreshing Coke for yourself and add a dollop of your favorite side to complete the meal.
Sit down, relax, and enjoy your effortless meal, well at least for the 10 minutes you have before rushing around once again!!
