I cry, every time.

This might make sense if I was one of those moms who cries over every little thing, but usually, my tears are reserved for those big moments. For me, one of those big moments is watching my kids go back to school each year. While other parents are doing happy dances there’s not one little part of me that likes dropping them off each fall. Especially this year as I drove off  leaving both of them from 7:50 – 3:20 each day for the very first time. That seems so incredibly long to be apart for 5 days out of the week.

I’m not one to let the tears linger, though. Oh no! Instead of sniffling I’m making the most of those quiet hours. I can’t believe how much work I’m getting done these days! The main thing I’m focusing on, however, is figuring out how to squeeze the most out of the precious moments we do have together. As I examined what the rest of our days after school pick up look like, one moment especially stood out: Dinner!

Now, before you think you know where I’m going with this hold on. I know you’re already familiar with all the benefits of eating dinner together as a family because I’ve touted those loudly and often. One extra important thing you may not have considered before, though, is how you can take your dinner prep time and turn it into bonding and family fun!


I spend at least 30 minutes to an hour each evening getting dinner ready. Last year I realized that this is valuable time that we could be spending together as a family. I learned how to bake when I was Amber’s age, and have loved it ever since. While my kids do bake with me, as well, dinner time each night gives us a way to take this fun and make it a regular part of our lives, and not just something for special occasions. This school year several nights a week you’ll find us all together, cooking up dinner and enjoying each other!

Cooking together as a family doesn’t have to be hard or intimidating. It actually can be fun, simple, not to mention helpful for you as the parent as well! When you’re beginning to cook with your kids it’s important to pick easy meals that everyone in the family will enjoy. Another way to include everyone is breaking the steps into age appropriate tasks no matter what meal you’re cooking together. For example my daughter can use forks to shred chicken,  my son can sprinkle on cheese, and I handle all the oven and sharp knife tasks.


This Cheesy Chicken Bacon Casserole Recipe is absolutely perfect for making with kids. By using items that are prepped already like Uncle Ben’s Boil in a Bag Rice makes it a breeze to make it together as a family. As you know, quick and easy meals are especially important during this busy time of year when everyone adjusting into a routine. Tender Chicken, Delicious Rice, Cheese, and Bacon make it a meal that the kids will be happy to eat up and be proud to have been a part of creating it. Cheesy Chicken Bacon Casserole Recipe



  • Rotisserie Chicken
  • Uncle Ben’s Natural Whole Grain Boil in a Bag Rice <— Click for a $0.75 Ready Rice products rebate from Ibotta exclusively at Walmart!
  • 1 TBS Roasted Garlic & Herb Seasoning (feel free to adjust this to taste!)
  • Cream of Chicken
  • 1/3 Cup Heavy Cream (feel free to substitute half and half or milk, it’ll just make a slightly thinner coating)
  • 1/4 Cup Bacon Pieces, finely chopped (I use the prepackaged, real bacon kind)
  • Colby & Monterey Jack Cheese


Preheat oven to 375 degrees

Make Uncle Ben’s Boil in a Bag Rice  following directions on box. A great kid step is to have them measure out and pour in the water before you place the pot on the stove. It was fun when my daughter started learning fractions in school and realized that was what those funny dashes were all about when we were measuring things.

{Cooking With Kids Tip} Counters are usually adult-height prep ready, not kid height. Move all the items to your table so they can easily do the steps without standing on tip-toe or having to use a chair.


While the rice is cooking cut meat off of the Rotisserie Chicken and shred/cut into small pieces. This is another great task to do all together. You can remove the skin, or leave it on for extra bits of flavoring in the dish–your choice!



One your chicken is all cut/shredded up into small pieces add the Roasted Garlic & Herb Seasoning & mix all together. This task is perfect for the littlest hands to handle!


Next add your cooked rice, Cream of Chicken, Heavy Cream, and Bacon pieces into bowl. Mix well.


Spread ingredients into 8×8 baking dish.


Sprinkle on cheese–another great job for little hands to help with!


Bake at 375 for 10-15 minutes or until cheese is melted and dish is hot throughout.


Have everyone gather together at the table and enjoy your amazing work together!
